Founded by three friends, Giambattista Cilia, Cirino Strano and Giusto Occhipinti, in 1980, today COS is one of Sicily’s most innovative and exciting wineries. The original winery dates back to the 1880s when Sicilian wines were in high demand due to the devastation caused by the Phylloxera pest throughout Europe’s main wine regions. COS has sought to revive Sicily’s reputation as a producer of excellent artisanal wines made from local grape varieties. The estate has been practising biodynamic agriculture since 2000 and was certified as organic in 2007. Zibibbo is the local Sicilian name for Muscat of Alexandria and this excellent example is sourced from prime vineyards in Marsala. The must is vinified on the skins using wild yeasts to produce a richly-flavoured and textured orange wine with plenty of complexity. Fermentation happens in “giare” or large amphorae which helps to preserve the natural character of the grape variety. The young wine is then matured in the amphorae for six months before bottling. On the nose there are enticing hints of toasted almonds, honeysuckle and tropical fruits. The palate reveals a rich texture and medium body complemented by intense stone fruit flavors and hints of sweet spice and candy.
