Cellar for 20 years or more. Decant for up to 2 hours before serving. G.D. Vajra is a family winery located in one of the finest wine regions in the world – Barolo. It was founded in 1972 by Giuseppe Domenico, who gave his initials to the winery’s name, and is now under the exemplary leadership of his son, Aldo Vajra. The winery is located in the village of Vergne, one of the highest points in the Barolo region. It was one of the first producers in Piedmont to adopt organic practices and uses the traditional method of ageing Nebbiolo in large Slavonian casks. The Coste di Rose spent 25 months ageing before it was ready for bottling. The result is an astounding, expressive wine, with a nose of rose petals, cherry, thyme and turned soil. The Nebbiolo grapes were grown in the sandy soil of Coste di Rose, one of Barolo’s steepest hills. Nebbiolo ripens perfectly here, giving this wine silky, pronounced tannins and a juicy mouthfeel. There are elements of red cherry on the palate, with notes of mint, raspberry and wet rock minerality. This leads to a lengthy finish, with further hints of rose petals. This Barolo will be an excellent pairing for rich, flavourful meats, like a roasted goose, venison, or thick mushroom risotto.
